The earliest mention of ravioli appears in the mid-14th-century. In Venice, they offer ravioli of green herbs blanched and minced, mixed with beaten egg and fresh cheese, simmered in broth-a recipe that would be familiar today. In Rome, ravioli were served with boiled chicken to the papal conclave of 1549. Ravioli were cited in 14th century England, appearing in an Anglo-Norman vellum under the name of rauioles. Maltese ravjul are stuffed with the locally produced sheep’s-milk ricotta. Whatever the origin, the idea of a ravioli or dumpling made with pasta has been around for a long while, and for good reason-they are delicious.
Please come and join Rico as he brings fresh ravioli to life and shows you just how easy this age old dish is to prepare. As always, these events sell out quickly so make your reservation early. This event is $55 per person with wine pairings, or $42 without.* Tax and gratuity are not included. Make your reservations now by calling Avellino at 508-347-2321.
