Italy’s most famous pasta dishes come from Lazio, with the four pasta sauces of Rome—carbonara, cacio e pepe, Amatriciana and Gricia—as well as arrabbiata, full of fiery chili. Throughout the Lazio Region one can find robust stews, rich, slow-cooked ragùs and large cuts of roasted lamb, pork, chicken or veal. Fresh vegetables are prevalent but the artichokes—either marinated in olive oil or deep-fried whole—are most famous. The Lazio region is more focused on curing whole cuts of meat and the most famous is guanciale, which is an integral part of many famous Lazian pasta dishes.
