Cooking with Rico: Campania/Naples

The cuisine of Campania has some of the oldest and richest culinary traditions in Italy. The heritage of Campania cuisine consists of dishes featuring elements of the Mediterranean diet, seafood, Neapolitan pizza, tomato ragu, and pasta, as well as ingredients like artichoke, melons, hazelnuts, lemons, and cheese. Much of the region's cuisine is familiar to North Americans because so many Neapolitans moved to the New World and opened restaurants. This region is home to the city of Avellino and the inspirational home of our restaurant.
In this Cooking with Rico series, Chef Rico will demonstrate why Campania's regional food has always been one of the most treasured and celebrated the world over.
