Cooking with Rico: Memphis in May BBQ

Memphis in May is an annual month-long festival featuring many different events. One of the most popular events, The World Championship Barbecue Cooking Contest is celebrating its 40th year in 2017. Like many southern varieties of barbecue, Memphis-style barbecue is mostly made using pork, usually ribs and shoulders, and is slow cooked in a pit. Memphis BBQ alternates between “dry” or “wet” with “dry” featuring just the BBQ rub and “wet”is always with a sauce. This is the perfect class right before the start of the picnic and grilling season. Chef Rico will also be focusing his energies on some creative sides to accompany the BBQ. Weather permitting, this event will be held on Avellino’s outdoor patio.
