Cooking with Rico & Dan: Tuscan Steak House

Tuscan food is based on the Italian idea of cucina povera or “poor cooking.” It’s about simple meals that are inexpensive and can easily be made in large quantities. Tuscan cooking doesn’t use complicated seasonings or elaborate creations because they’re not needed. It’s all about using fresh high-quality ingredients. Tuscan’s are also as crazy about their beef as Americans and the Bistecca Fiorentina is an absolute staple in Tuscany. This large T-bone steak, traditionally from the Chiana valley, is so thick that it must be cooked on its front, back, and side. The Bistecca Fiorentina is just one example of the love Tuscan’s have for what we know of as steak in their region.
